Banana Bread Christmas Cupcakes with Frosting: Perfect for a delicious Christmas breakfast!

Made with our award-winning chocolate banana bread mix , these delicious Christmas cupcakes are the perfect treat to add a little extra magic to your morning. Not only are they super easy to make, they’re also super nutritious.
The frosting? It’s just as festive as the tree itself! Thanks to a touch of matcha (or spirulina), the cupcakes get a beautiful greenish hue, perfect for staying in the Christmas spirit.
Ingredients for the cupcakes:
- 1 baking mix for banana bread with chocolate
- 4 ripe bananas
- 3 tbsp olive oil
- 2 eggs
- 1 yoghurt (125g)
Preheat oven to 180C. Mix bananas, oil, eggs and yoghurt until smooth. Mix in banana bread mix with a fork. Spoon the mix into muffin cups. Bake muffins for about 25 minutes in a preheated oven. Do the prick test after 20min to see if they are done (baking time may depend on oven strength).
Tip 1: It is better to bake the muffins slightly under than over, because then they will become dry.
Tip 2: Use an ice cream scoop to divide the mix between the molds. 1 scoop = 1 muffin
What do you need for the frosting?
- 200g full fat cream cheese
- 100g Greek yoghurt (10% fat)
- 50g (1/2 cup) icing sugar
- 1 tsp matcha powder (or spirulina powder)
How do you make the frosting?
- Place the cream cheese and yogurt in a bowl. Mix with an electric mixer until smooth.
- Add the powdered sugar and matcha powder (or spirulina) and mix until well incorporated.
- Refrigerate until ready to use, or use immediately to decorate cupcakes. Note: cupcakes must be completely cooled before frosting!
For an extra festive effect, you can finish the cupcakes with chocolate sprinkles and other Christmas sprinkles.
Tip: the cupcakes are extra delicious with Christmas music in the background
