Recipe: Overnight Vanilla Raspberry Oatmeal
Ingredients (1 serving)
For the base
- 1 tbsp Boost Mix (chia seed, hemp & linseed)
- ½ cup (frozen) raspberries
- 1 bag of Natural Oatmeal (40g) + 1 tsp vanilla extract or 1 bag of Vanilla-Collagen Oatmeal
- 60 ml yogurt
- 120 ml plant-based milk (e.g. almond milk or oat milk)
For the topping
- Extra raspberries and/or blueberries
- 1 tbsp peanut butter , cashew butter or almond butter
Preparation
- Make the raspberry jam: Place the (frozen) raspberries in a jar and briefly defrost them in the microwave. Add the Boost Mix and let it thicken for a few minutes.
- Mix the base: In a bowl, combine the oats with the yogurt, vanilla, and plant-based milk. Pour this mixture over the raspberry jam.
- Finish with toppings: Add extra raspberries and/or blueberries and a tablespoon of nut butter of your choice.
- Let it rest: Cover the jar and refrigerate overnight. Your overnight oatmeal will be ready to enjoy the next morning!
