High Protein Oatmeal Pastry Vanilla Collagen

Ingredients
- 5 servings Oatmeal Vanilla Collagen (200g)
- 4 tbsp Boost Mix
- 200ml (almond) milk
- 2 eggs
- 2 ripe bananas (approx. 200g)
- Optional: Greek yogurt and maple syrup for finishing
Preparation
For 1 cake = 4 portions
1. Preheat the oven to 180°C and place a sheet of baking paper in an oven dish.
2. In a bowl, mash the bananas and add the eggs and almond milk. Mix everything well.
3. Stir the oats and Boost Mix into the banana-milk mixture and let it sit for 5 minutes to thicken.
4. Pour the mixture into the baking dish and bake for 25-30 minutes
5. Let the oatmeal cake cool for 10 minutes before removing it from the tin and cutting into pieces.
6. Finish with a spoonful of Greek yoghurt and optionally a drizzle of maple syrup for an extra creamy and sweet finishing touch. Delicious cold or warm it up in the microwave for a warm breakfast.
Tip: also delicious with some peanut butter as a topping.
