Healthy Lotus Speculoos Oatmeal

Ingredients (for 1 serving)
- 1 bag (40g) Vanilla Collagen Oatmeal
- 1 heaping tablespoon unsweetened applesauce
- 4 tablespoons milk of your choice (regular or plant-based)
- ½ teaspoon baking powder
- 1 teaspoon speculoos spread
- (Optional) 3 mini chocolate chip cookies
For the topping:
- 1 teaspoon melted speculoos spread
Preparation
- Preheat the oven to 180°C.
- Mix the base: Mix the oats with applesauce, milk and baking powder in a bowl until smooth.
- Assemble: Spoon the mixture into a small baking dish or ramekin. Add a teaspoon of speculoos spread to the center and press it lightly with the back of a spoon. For extra crunch, crumble 3 mini chocolate chip cookies and sprinkle them on top.
- Baking: Place the mixture in the oven and bake for about 15–18 minutes, or until the edges are golden brown.
- Finishing: Let the cake cool for 5 minutes. Meanwhile, melt a teaspoon of speculoos spread in the microwave (30 seconds) as a topping.
- Fiber: Finish your breakfast with a large handful of blueberries on top.

Tips & Variations
- Vegan option: Use plant-based milk and choose a vegan alternative for the lotus speculoos spread.
- Extra crunch: Add some extra chopped nuts, cacao nibs, or some Peanut Love Granola to the oatmeal.
- Additional nutritional information: Add more fruit as a topping, such as a banana or kiwi, a generous tablespoon of yogurt or skyr, or mix a tablespoon of Boost Mix into the batter for Omega-3 and extra protein. You can also replace the melted speculoos spread with a tablespoon of melted peanut butter for less sugar.
