Healthy Lotus Speculoos Oatmeal

Are you looking for a healthy and delicious breakfast that you can have on the table in no time? This Lotus Oatmeal is everything you are looking for: easy to make, nutritious and incredibly tasty.

  • Quick & easy: Ready in 20 minutes, including baking time.
  • Healthy: Oatmeal as a base, supplemented with natural ingredients such as applesauce and milk of your choice.
  • Delicious: A dash of lotus spread makes it irresistibly delicious.

Ingredients (for 1 serving)

  • 1 bag (40g) Vanilla Collagen Oatmeal
  • 1 heaping tablespoon unsweetened applesauce
  • 4 tablespoons milk of your choice (regular or plant-based)
  • ½ teaspoon baking powder
  • 1 teaspoon speculoos spread
  • (Optional) 3 mini chocolate chip cookies

For the topping:

  • 1 teaspoon melted speculoos spread

Preparation

  1. Preheat the oven to 180°C.
  2. Mix the base: Mix the oats with applesauce, milk and baking powder in a bowl until smooth.
  3. Assemble: Spoon mixture into a small baking dish or ramekin. Add a teaspoon of speculoos spread into the center and press lightly with the back of a spoon. For extra crunch, crumble 3 mini chocolate chip cookies and sprinkle on top.
  4. Baking: Place in the oven and bake for about 15-18 minutes, or until the edges are golden brown.
  5. Finishing: Let the cake cool for 5 minutes. In the meantime, melt a teaspoon of speculoos spread in the microwave (30 sec) as a topping.
  6. Fiber: Finish off your breakfast with a large handful of blueberries on top

Tips & Variations

  • Vegan option: Use vegetable milk and choose a vegan alternative for the lotus speculoos spread.
  • Extra crunch: Add extra chopped nuts, cacao nibs or some Peanut Love Granola to the oatmeal.
  • Extra nutrition: add more fruit as a topping such as a banana or kiwi, add a large tablespoon of Yogurt or Skyr as a topping, you can also add an extra tablespoon of Boost Mix to the oat mixture before putting it in the oven for Omega 3 and extra protein. Or replace the melted speculoos spread with a tablespoon of melted peanut butter for less sugar.
