Baked quinoa breakfast with blueberries

Ingredients

2 bananas

1 cup quinoa

2 cups of milk of your choice (light coconut milk is very tasty with this)

Bowl of blueberries
- handful of coconut flakes
Preparation

Preheat the oven to 180°C.

Mash the bananas in a medium baking dish.

Mix in the quinoa, boost mix and milk until smooth.

Add the blueberries and coconut flakes and stir.

Bake the baked quinoa with blueberries in the oven for 35 minutes.

Serve with extra blueberries and Greek or coconut yogurt as a topping.
