Baked oatmeal with blueberries
Ingredients
- 300g Muesli (6 bags)
- 1 ½ tablespoon Boost Mix
- 1 teaspoon baking powder
- ¼ teaspoon fine salt
- ½ teaspoon ground cinnamon
- 3 tablespoons maple syrup or honey
- 1 ripe banana, mashed (~½ cup) or unsweetened applesauce
- 2 large eggs
- 375 ml (vegetable) milk of your choice
- 60g melted butter or coconut oil
- 1 ½ cups frozen blueberries, do not thaw (fresh will also work)

Preparation
- Preheat oven to 180°C. Grease a 23x23cm baking tin or line with baking paper.
- In a bowl, mix all ingredients well.
- Pour the mixture into the prepared baking pan. Add a few extra frozen blueberries on top.
- Bake for 30-35 minutes or until the center is set.
- Let rest for 10 minutes before serving.
- Serve with a tablespoon of whipped cream or yogurt and maple syrup and a drizzle of peanut butter, if desired.
