Baked oatmeal with blueberries

Ingredients

  • 300g Muesli (6 bags)
  • 1 ½ tablespoon Boost Mix
  • 1 teaspoon baking powder
  • ¼ teaspoon fine salt
  • ½ teaspoon ground cinnamon
  • 3 tablespoons maple syrup or honey
  • 1 ripe banana, mashed (~½ cup) or unsweetened applesauce
  • 2 large eggs
  • 375 ml (vegetable) milk of your choice
  • 60g melted butter or coconut oil
  • 1 ½ cups frozen blueberries, do not thaw (fresh will also work)

Preparation

  1. Preheat oven to 180°C. Grease a 23x23cm baking tin or line with baking paper.
  2. In a bowl, mix all ingredients well.
  3. Pour the mixture into the prepared baking pan. Add a few extra frozen blueberries on top.
  4. Bake for 30-35 minutes or until the center is set.
  5. Let rest for 10 minutes before serving.
  6. Serve with a tablespoon of whipped cream or yogurt and maple syrup and a drizzle of peanut butter, if desired.
