Chocolate Coconut Overnight Oats

Ingredients
For 1 serving:
- 1 bag of chocolate banana oatmeal (40g)
- 1 tbsp grated coconut
- ½ cup (120 ml) light coconut milk (or other plant-based milk)
Toppings:
- 125g fresh strawberries, halved
- 1 tsp grated coconut
- 2 tsp cocoa nibs or a piece of dark chocolate
- 1 tsp peanut butter

Preparation
- Evening Prep: Add the oats, shredded coconut, and coconut milk to a pot or bowl. Stir well until well combined.
- Place in the fridge and let it soak overnight. This will ensure that the oats absorb the flavours and become wonderfully soft.
- Serving in the morning: Stir the overnight oats in the morning.
- Finish with strawberries, extra grated coconut and cacao nibs. Add a teaspoon of peanut butter for an extra flavour boost and healthy fats.
