Chocolate Coconut Overnight Oats

Good morning, everyone! Today I want to share with you a delicious and nutritious breakfast idea that is not only easy to make, but also perfect for busy mornings: Chocolate Coconut Overnight Oats . This recipe combines the rich flavor of chocolate with the sweet touch of fresh strawberries and coconut and is a great way to start your day off right.

Ingredients

For 1 serving:

  • 1 bag of chocolate banana oatmeal (40g)
  • 1 tbsp grated coconut
  • ½ cup (120 ml) light coconut milk (or other plant-based milk)

Toppings:

  • 125g fresh strawberries, halved
  • 1 tsp grated coconut
  • 2 tsp cocoa nibs or a piece of dark chocolate
  • 1 tsp peanut butter

Preparation

  1. Evening Prep: Add the oats, shredded coconut, and coconut milk to a pot or bowl. Stir well until well combined.
  2. Place in the fridge and let it soak overnight. This will ensure that the oats absorb the flavours and become wonderfully soft.
  3. Serving in the morning: Stir the overnight oats in the morning.
  4. Finish with strawberries, extra grated coconut and cacao nibs. Add a teaspoon of peanut butter for an extra flavour boost and healthy fats.

Overnight oats have become increasingly popular in recent years, and for good reason. They are quick and easy to prepare, you can vary endlessly with flavors and toppings, and they are ideal to prepare in advance.
