Scrambled oatmeal with berries

The ultimate win-win breakfast! 🥞🍌

This delicious breakfast is a cross between a fluffy pancake and a warm bowl of oatmeal, perfect for a cozy morning. This dish is packed with natural ingredients and is super simple to make. Bonus: it's easily adapted to a vegan version.

Whether you're an early bird or want to start your weekend off calmly, this breakfast will put a smile on your face (and give you energy for the day)!

Ingredients

For the topping:

  • 2 tbsp Greek yogurt (or a plant-based alternative)
  • 2 handfuls of fresh fruit of your choice (approx. 100g)
  • 1 tbsp nut butter

Here's how to make it:

  1. Mash & mix: Mash the banana with a fork in a bowl. Add the egg (or plant-based yoghurt), oats and cinnamon and mix everything well.
  2. Bake like a pro: Heat a skillet over medium heat. Spread the mixture evenly in the pan and bake for about 5 minutes.
  3. Stir as Scrambled Eggs: Use a spatula to scrape the mixture and stir as you would scrambled eggs. Cook for another 5 minutes until golden brown and fragrant.
  4. Serve & enjoy: Spoon onto your yogurt, top with fresh fruit and a drizzle of your favorite nut butter.
