Ingredients:
- 4 ripe bananas
- 3 tablespoons olive oil
- 2 eggs
- 1 plain yoghurt (125g)
- Banana Bread Baking Mix
Preparation:
- Line a cake tin with baking paper.
- Preheat the oven to 180°C.
Preparation:
- Place the yoghurt, eggs, olive oil and bananas in a bowl and mix until smooth with a hand blender.
- Add the baking mix and stir well with a fork.
- Pour the dough into the cake tin.
Finish:
- Place the cake tin in the oven and bake for approx. 40-45 minutes, or until a skewer inserted into the centre of the banana bread comes out clean. *Every oven is different, so keep an eye on your cake and test every 5-10 minutes for the first time from 35 minutes (for powerful ovens) to 50 minutes until you find the perfect timing for your cake.
- Remove the cake from the oven and let it cool in the tin for about 10 minutes.
- Remove the cake from the cake tin and let it cool completely on a wire rack.
- Store the cake in the refrigerator for about 5 days or freeze it in individual portions.
