Chia Pudding with Puffed Spelt Pops

Summer is coming and that means sunny days, fresh flavors and light meals. Today I share a delicious and nutritious recipe that fits perfectly with this season: Chia Pudding with Red Fruit Granopops.

Granola pops with chia pudding

Ingredients (for 1 serving):

  • 3 tablespoons Boost Mix
  • 1 cup (250 ml) plant-based milk of your choice
  • 1 full tablespoon (vegetable) yoghurt
  • 2 teaspoons honey or maple syrup (optional)
  • 1 bag of Granopops Red Fruits (15g)
  • A handful of berries of your choice, for garnish

Preparation:

  1. Mix the Ingredients: Add chia seeds, milk, yogurt and sweetener to a bowl or (glass) jar. Beat vigorously until well combined. Beat several times during the first 5 minutes to prevent lumps.

  2. Let it rest: Cover the pudding and place it in the refrigerator for at least 1 hour (you can also leave it in the refrigerator overnight).

  3. Serving: Stir the chia pudding once more before serving. Finish with Granopops and a handful of fresh raspberries.

Enjoy it!

  1. Rich in Omega-3 Fatty Acids: Chia seeds contain high levels of alpha-linolenic acid (ALA), a plant-based form of heart-healthy omega-3 fatty acids. Flaxseed is one of the best plant sources of omega-3 fatty acids and contains lignans, antioxidants that can help with hormonal balance . Hemp seeds contain an ideal balance of omega-3 and omega-6 fatty acids, which are essential for skin, brain and heart health.

  2. High Fiber Content: The fiber in chia seeds supports healthy digestion and helps maintain a feeling of fullness , which can aid in weight management. Flaxseed contains both soluble and insoluble fiber, which contribute to healthy bowel function and regular bowel movements . The fiber, antioxidants and healthy fats in flaxseed contribute to lower cholesterol levels and better heart health.

  3. Protein source: Chia seeds contain a significant amount of vegetable protein, which contributes to muscle recovery and growth . Hemp seeds contain all 9 essential amino acids, making them a complete protein source .

In short, a real powerhouse!
