- Bake & Flip . Heat some olive oil or butter in a large non-stick pan or on a griddle over medium heat. Pour the batter in 1/3 cup portions into the pan and cook for 2-3 minutes, until the bottom is golden brown and small bubbles appear around the edges. Flip and cook for another 2 minutes.

Want to make your pancakes ahead of time and serve them later? First, place them on a baking sheet, keeping them apart, and freeze them for at least 30 minutes. Then, transfer them to freezer bags and store them in the freezer for up to 3 months .
Reheating is easy: place the pancakes on a plate and heat them in the microwave for 30 to 60 seconds, or until warm.

- 2 ripe bananas (with brown spots)
- 2 eggs
- ½ cup (120ml) milk
- 1 tsp vanilla extract
- 150g or 4 bags of oatmeal
- 2 tsp baking powder
- ½ tsp cinnamon
- ¼ tsp salt
- Olive oil or butter for frying
How do you make these oatmeal banana pancakes?
- Blend all ingredients into a smooth batter (about 30–60 sec), then let it rest while you heat the pan.
- Heat a frying pan or griddle over medium heat and grease with oil or butter.
- When the pan is hot, scoop 1/3 cup of batter into each pancake. Cook several pancakes side by side, but not too close together. Cook until bubbles form around the edges and the pancakes are slightly dry and fluffy (approximately 2–4 minutes).
- Flip them over and cook for another 1–2 minutes until golden brown. If the pancakes brown too quickly, reduce the heat to prevent burning. If your pan starts to smoke, your heat is too high.
- Wipe your pan clean with a paper towel and repeat with fresh oil or butter and the remaining batter. This batter will make about 8-9 pancakes in total.
- Serve with extra banana, nuts, fresh fruit, yogurt, peanut butter and/or a little maple syrup.
