Baked oatmeal with raspberries & chocolate
This breakfast recipe is a family favorite! It's a great recipe to make ahead so you can enjoy a quick, nutritious, and delicious breakfast during the busy week.
Ingredients
- 2 x ¾ cup Natural Oatmeal (300 g or 6 sachets)
- 1 tbsp Boost Mix
- 1 teaspoon baking powder
- ¼ teaspoon fine salt
- ¼ cup maple syrup or honey (70 g)
- ½ cup yogurt (120 g)
- 2 large eggs
- 1+¼ cup milk of choice (300 g)
- ¼ cup melted unsalted butter or coconut oil (60 g)
- 1 cup fresh or frozen raspberries
- ¼ cup sugar free chocolate chips

Preparation
- Preheat oven to 180°C. Grease a 23x23 cm baking dish or line it with baking paper.
- In a bowl, combine oats, boost mix, baking powder, salt, maple syrup, yogurt, eggs, milk, and butter. Stir until well combined.
- Then mix in the raspberries and chocolate chips.
- Pour into the greased baking pan. Finish with a few extra berries and chocolate chips on top.
- Bake for 30-35 minutes or until the center is set.
- Let cool for 10 minutes before serving.
