Baked oatmeal with raspberries & chocolate

This breakfast recipe is a family favorite! It's a great recipe to make ahead so you can enjoy a quick, nutritious, and delicious breakfast during the busy week.

Ingredients

  • 2 x ¾ cup Natural Oatmeal (300 g or 6 sachets)
  • 1 tbsp Boost Mix
  • 1 teaspoon baking powder
  • ¼ teaspoon fine salt
  • ¼ cup maple syrup or honey (70 g)
  • ½ cup yogurt (120 g)
  • 2 large eggs
  • 1+¼ cup milk of choice (300 g)
  • ¼ cup melted unsalted butter or coconut oil (60 g)
  • 1 cup fresh or frozen raspberries
  • ¼ cup sugar free chocolate chips

Preparation

  1. Preheat oven to 180°C. Grease a 23x23 cm baking dish or line it with baking paper.
  2. In a bowl, combine oats, boost mix, baking powder, salt, maple syrup, yogurt, eggs, milk, and butter. Stir until well combined.
  3. Then mix in the raspberries and chocolate chips.
  4. Pour into the greased baking pan. Finish with a few extra berries and chocolate chips on top.
  5. Bake for 30-35 minutes or until the center is set.
  6. Let cool for 10 minutes before serving.
