Healthy Chickpea Blondies
Looking for a healthy, protein-rich and kid-friendly snack? Then these Chickpea Oat Blondies are exactly what you need! They are deliciously creamy, easy to make and... you really can't taste the chickpeas! Perfect for in the lunch box, as a snack after your workout or just with a cup of tea.
Ingredients:
- 400g chickpeas
- 100g peanut butter
- 80g oatmeal
- ⅓ cup maple or agave syrup
- 1 tsp vanilla extract
- ½ tsp baking powder
- ¼ tsp sea salt
- ⅓ cup (sugar free) chocolate chips
Preparation method:
- Preheat the oven to 180°C.
- Place all ingredients, except the chocolate chips, in a blender.
- Mix into a coarse, sticky dough.
- Fold in the chocolate pieces.
- Divide the mixture into a brownie tin lined with baking paper and smooth the top.
- Bake the blondies for 21 minutes or until golden brown around the edges.
- Let cool completely before cutting into cubes.
